Commis Chef interview questions and preparation in Tanzania

A Commis Chef interview may explore how you work, communicate, and handle ordinary situations in the role. Prepare your own examples instead of memorising generic answers.

Role questions

Prepare for questions about the work itself

A Commis Chef is an early-career kitchen worker who supports a Chef de Partie, Sous Chef, or another assigned senior cook. The work builds mise en place, basic preparation, safe storage, cleaning, service support, and clear handovers under direction rather than independent menu authority.

  • Explain how you would organise a preparation list when a senior cook gives several tasks before service begins.
  • Describe what you would do if an ingredient, label, recipe step, or piece of equipment did not seem clear or safe.
  • Show how you would keep raw ingredients, prepared food, tools, and work surfaces organised while helping a busy section.
  • Give an example of a useful handover that recorded unfinished preparation, storage, cleaning, waste, or an equipment concern.

Work examples

Use a clear situation, action, and result

Choose a small but real example. Explain the situation, your responsibility, the action you took, and what happened. If the result was not perfect, explain what you learned without blaming someone else.

  • An anonymised preparation list, section checklist, or handover note showing the supervised kitchen work you completed.
  • A reference from a chef or supervisor who can describe your preparation, reliability, cleaning, and response to instructions.
  • A specific example of reporting a shortage, correcting a preparation detail, or supporting a busy service safely.
  • Culinary, food hygiene, workplace safety, or kitchen training records only when completed and relevant to the vacancy.

Skills to demonstrate

Connect each skill to working behaviour

Use only experience, training, documents, and results you can explain and support. A focused application is stronger than an inflated one.

  • Basic knife work, weighing, portioning, peeling, chopping, and other preparation techniques appropriate to a supervised kitchen role.
  • Careful reading of recipes, preparation lists, labels, portion instructions, and section requests without guessing at an unclear step.
  • Safe handling, cleaning, covering, labelling, and storage of ingredients according to the property's kitchen procedures.
  • Time awareness and willingness to ask a senior cook for direction when preparation, service, or equipment priorities change.
  • Respectful teamwork and accurate handovers with commis chefs, section chefs, stewards, stores, and the service team.

On the day

Confirm the time, place, and documents

Common questions

Questions worth answering before you apply

How should I answer “tell us about yourself” for a Commis Chef role?

Start with your level, name relevant experience, give one example of an important skill, then explain why this vacancy fits your next step.

What if I do not know an answer in a Commis Chef interview?

State what you know, ask for clarification, and explain a safe way to get the information. You can connect the answer to a skill you can support, such as Basic knife work, weighing, portioning, peeling, chopping, and other preparation techniques appropriate to a supervised kitchen role.

What should I ask at the end of a Commis Chef interview?

Ask about the team, schedule, or how an everyday duty is handled. A useful role-specific question could relate to this: Attend the kitchen briefing, read the preparation list, and confirm which tasks take priority with the senior cook on duty.
